Raquel Araceli Vásquez Cortés and Eugenia Sanda Márculianu


El Costeño

Raquel Araceli Vásquez Cortés was born in Xalapa, Veracruz, Mexico in 1962. She migrated to the United States and settled in Lexington, Kentucky in the early 2000s. She’s loved to cook since her childhood, learning many traditional Mexican recipes from her Tia (aunt) Rosa. She worked as a cook at El Costeño for many years before taking ownership in 2017. Eugenia (Sanda) Marculianu was born in Romania in 1988 and migrated to the United States in 2016. She learned to speak Spanish while living in Spain before moving to Lexington in 2016. Raquel met Sanda at church. Sanda was looking for a place to stay and Raquel offered her help and hired her at the restaurant. Sanda cooks a few Romanian dishes, found on El Costeño’s menu, alongside items like menudo, pozole, molcajetes, tacos, tamales, and a variety of Veracruz seafood dishes.

Raquel Araceli Vásquez Cortés nació en Xalapa, Veracruz, México en 1962. Ella inmigró a los Estados Unidos y se instaló en Lexington, Kentucky a principios de los años 2000. A ella le ha encantado cocinar desde que era niña, y aprendió muchas de las recetas mexicanas tradicionales de su Tía Rosa. Ella trabajó como cocinera en El Costeño por muchos años antes de hacerse dueña en 2017. Eugenia (Sanda) Márculianu nació en Rumania en 1988 e inmigró a los Estados Unidos en 2016. Ella aprendió a hablar español mientras vivía en España antes de mudarse a Lexington en 2016. Raquel conoció a Sanda en la iglesia; Sanda estaba buscando un lugar donde quedarse y Raquel le ofreció ayuda y la contrató en el restaurante. Sanda cocina unos cuantos platos rumanos que se encuentran en el menú del Costeño, junto con tales platos como menudo, pozole, molcajetes, tacos, tamales y una variedad de platos de mariscos veracruzanos.
