Jesús Martínez and Izmene Peredo
Con Huevos
To understand how appealing the idea of opening a Mexican restaurant is for newly arrived Latinos, consider Jesús Martínez and Izmene Peredo. Jesús Martínez was born in Mexico City in 1971. Izmeme Peredo was born in Guadlajara, Jalisco in 1976. The husband-and-wife are white-collar workers who met at Brown-Forman (a spirit and wine company based in Louisville, Kentucky). The couple relocated from Guadalajara in 2012.
Jesús Martínez and Izmene Peredo realized something was missing in the Louisville restaurant market: a proper desayuno (Mexican breakfast) complete with dishes like molletes (French rolls smeared with beans and meat), and café de la olla (cinnamon-tinted coffee). They opened Con Huevos in 2015.
Bilingual readers will crack up at the name, which literally translates as “with eggs” and refers to the restaurant’s many egg-based dishes. It is also a Mexican Spanish idiom meaning “with balls,” as in putting all your effort into something. While Jesús Martínez and Izmene Peredo picked the name for its playfulness, they also did it out of respect for working-class Latinos.
“Why the name Con Huevos?” says Jesús Martínez. “Because we are Mexicans. Precisely for that. And as Mexicans, we want to celebrate, honor all those who have done a lot of hard work to get ahead. To all those who have to get up very early, right? To start the day and earn the daily bread. And who gets up with eagerness and has to do it with a lot of balls. It’s precisely why we took the decision to acquire that name. Without fear, saying it openly, that’s how we Mexicans say it—“¡Con huevos!” And that’s precisely why we adopted that name.”

Para entender que tan atractivo es la idea de abrir un restaurante mexicano para los latinos recién llegados en el Sur, considere Jesús Martínez y Izmene Peredo. Jesús Martínez nació en la Ciudad de México en 1971. Izmeme Peredo nació en Guadlajara, Jalisco en 1976. Son trabajadores de cuello blanco, primeramente reuniendose en Brown-Forman (una compañía de alcohol y de vinos ubicado en Louisville, Kentucky) , lo que llevó a la pareja a trasladarse de Guadalajara en 2012.
Al llegar a Kentucky, Jesús Martínez y Izmene Peredo se dieron cuenta de que algo faltaba en el mercado restaurante mexicano: un desayuno mexicano adecuado completa con platillos como molletes (bollilos untadas con frijoles y carne), y el café de la olla . Abrieron Con Huevos en 2015.
Lectores bilingües van a burlarse inmediatamente con el nombre, que se traduce literalmente como “con huevos” y se refiere a los muchos platillos de huevos del restaurante. También es un modismo del español mexicano que significa “con testículos,” poner todo su esfuerzo en algo. Y mientras Jesús Martínez y Izmene Peredo escogieron el nombre por su alegría, sino que también lo hicieron por respeto a los trabajadores latinos.
“¿Por qué el nombre de Con Huevos?” dice Jesús Martínez. “Porque somos mexicanos. Precisamente por eso. Y como mexicanos, queremos nosotros celebrar, honorar a todos aquellos que les ha costado mucho trabajo a salir adelante. A todos aquellos que tienen que levantarse muy temprano, ¿no? Para empezar el día y ganarse el pan de cada día. Y que se levantan con muchas ganas y que lo tienen que hacer con muchos huevos. Es precisamente por eso que nosotros tomamos la decisión de adquirir ese nombre. Sin temor, con decirlo abiertemento, así lo decimos los mexicanos—“¡Con huevos!” Y es precisamente que adoptamos ese nombre.”
