Francisco Briceno


Santa Fe Grill

Francisco Briceño was born in 1962 in Plateros, Zacatecas. When he arrived in the United States in 1989, he settled in the working-class suburbs of Los Angeles. He found work in factories, but the hustle of the city eventually wore on him, and he joined his brothers in Louisville, Kentucky in 1999. After working with his siblings at a general store, he took over the other family business in 2002: Santa Fe Grill, set within walking distance of Papa John’s Cardinal Stadium.

Francisco Briceño had no previous experience as a restaurateur, but he had strong instincts. He quickly made Santa Fe Grill successful by changing the menu to fit customer requests. He has introduced dishes like beef tongue (lengua) and fish (pescado) and shrimp (camarón) tacos. And he’s also quickly adapted to life in los Estados Unidos, naming his two sons Kobe and Bryant, after the Los Angeles Lakers superstar. Santa Fe Grill is a neighborhood restaurant, with little in the way of a social media presence or online buzz. And that suits Francisco Briceño just fine. “I love the work. It’s something sacred.”

Francisco Briceño nació en 1962 en Plateros, Zacatecas. Se instaló en el sur de California cuando llegó a los Estados Unidos en 1989, viviendo en los suburbios obreros de Los Ángeles. Encontró trabajo en las fábricas, pero se enfado del bullicio de la ciudad, y él se unió a sus hermanos en Louisville, Kentucky, en 1999. Después de trabajar con sus hermanos en una tienda de abarrotes, se hizo cargo de la otra empresa familiar en 2002: Sante Fe Grill, situado a poca distancia de Papa John Cardinal Stadium.

Briceño no tenía experiencia previa como un restaurador, pero tenía instintos fuertes. Rápidamente logro éxito con Santa Fe Grill al cambiar el menú para adaptarse a las peticiones de su cliente. Santa Fe Grill es un restaurante de barrio, con poco en el camino de una presencia en los medios sociales. Y así le gusta a Briceño. “Me encanta el trabajo. Es algo sagrado.”
