Tim Jordan
Saucey Lady Oysters & Panacea Area Oyster Company
Tim Jordan was born in 1945 in Tampa, Florida. Jordan’s grandfather had a cattle ranch in Hillsborough and Manatee Counties. Jordan also pursued an agricultural career. After attending FSU, he began growing tomatoes in Ruskin, Florida. Finding it difficult to be a small farmer, Jordan moved to Wakulla in 1985. He worked in real estate until 2015.
Jordan missed spending time outdoors. He entered the first class of oyster farming with the Wakulla Environmental Institute, a branch of Tallahassee Community College. He learned about oyster husbandry, and in 2015, Jordan and a business partner began farming oysters. Their oysters are marketed and sold under the Saucey Lady Oyster label. They eventually began Panacea Area Oyster Company, a processing facility and oyster packing house. They process the oysters of local farmers, and they encourage them to market and sell their harvest under their own labels. Their facility provides needed equipment and space for oyster aquaculturists to affordably process and market their oysters to purveyors.
