Zack Redes, born in 1981, is a native of Perdido Beach, Alabama. He spent his teenage summers working in restaurants in Orange Beach, Alabama. That work inspired him to pursue a career as a chef.
After working in other restaurants in Birmingham, he joined the team at Highlands in 2010, where he worked his way from expo station, to prep, to the sauté and grill station before becoming chef de cuisine. Maintaining excellence over the decades at Highlands starts with strong leadership, says Redes. In addition to food service, he now focuses on education and management, teaching his colleagues menu development, organization, and time management.
