Pableaux Johnson’s Red Beans and Rice

Earlier today, we shared a piece by Sarah Baird on the New Orleans ritual of drinking, dancing, and eating red beans and rice in bars with strangers who quickly become family. Others in the city, like longtime SFA friend Pableaux Johnson, prefer to gather friends around their own tables for the requisite Monday meal.

At our summer symposium last month, Pableaux was kind enough to share this meal with all our guests, along with his recipe. Judging by social media (and the way their faces lit up), this recipe, taped to a bag of Camellia brand red beans, was the most treasured souvenir folks took home.
