A Taste of Texas Barbecue
June 14-15, 2002

The SFA rambled in and around the city of Austin for the second annual Field Trip. Over the course of a day and half, we explored the foodways of Central Texas, a region where cultural, ethnic, geographic, and agricultural forces converged to create a world-class barbecue culture. There was a Blues and Barbecue at the Victory Grill, once a stop on the segregation-era Chitlin Circuit. There was great debate over a cultural conundrum: where the South ends and the West begins. And there were buses, the Taylor-Elgin Express and the Lockhart-Luling Loop, offering guided tours of barbecue pits filled with sausage and brisket.
