Bill Bayley Jr. is the owner of Bayley’s Seafood in tiny Theodore, Alabama, a stone’s throw from Mobile Bay. His father, Bill Bayley Sr., first opened Bayley’s in 1947. Eventually it closed, and Bayley Jr. resurrected the business in its original location in the early 1990s.
Though it serves a variety of Gulf seafood, Bayley’s is known for two specialties: West Indies salad and fried crab claws. In this short film by Wes Wages, Bill Bayley Jr. explains the origins of his father’s proprietary dishes, now considered Gulf Coast classics.
